Spicy Peanut Noodles
One of my favourite comfort foods is a big bowl of spicy noodles. There are many ways one can go. Today it’s a tangle of spicy peanut noodles. This saucy vegetarian noodle dish couldn’t be easier as it comes together in under 15 minutes and packs a lot of flavour.
All you do is mix the sauce ingredients in a bowl, toss in the cooked noodles and it’s ready to enjoy. I can’t think of anything better when you need to make a quick meal. Bulk up this noodle dish with sautéed onion, bok choy, broccoli florets, mushrooms or any veggies that you like. You just can’t go wrong.
Spicy Peanut Noodles
Ingredients
- 3 tbsp smooth peanut butter
- 1 tsp chopped garlic
- 1 tsp finely grated ginger
- 1 tsp sesame oil
- 2 tbsp tamari
- 1 tbsp honey
- 1/2 tsp chili flakes or more if you like the heat
- 1 tbsp rice wine vinegar
- 3 tbsp water
- 3 green onions thinly sliced
- 2 tsp sesame seeds
- Cooked noodles of your choice
Instructions
- While the noodles are cooking, place all ingredients except green onions and sesame seeds in a medium-sized bowl and mix until well combined.
- Add drained cooked noodles to the bowl and toss until well coated.
- Finally add in the sesame seeds and sliced green onions, but save some to sprinkle over as a garnish.
