Vegetarian Split Pea Soup
This chunky vegetarian split pea soup is every bit as delicious as the soup that my mom used to make. It is simply – green split peas, onions, carrots and celery cooked until tender, partially pureed and seasoned. It’s a really easy one to make, so comforting and very nostalgic for me.
Vegetarian Split Pea Soup
Ingredients
- 6 cups low sodium vegetable broth
- 2 garlic cloves minced
- 1 medium onions chopped
- 1 cup carrots chopped
- 2 celery stalks chopped
- 2 cups dried green split peas rinsed
- ¼ cup celery leaves chopped
- ¼ cup parsley chopped
- ½ tsp ground cumin
- ½ tsp dried basil
- ½ tsp dried oregano
- salt and pepper to taste
Instructions
- In a large saucepan, combine all ingredients and bring to a boil.
- Stir well, reduce heat, cover and simmer for 1 hour until peas are tender.
- Check for seasoning. Cool slightly before blending the soup with a hand blender. Return to heat and simmer for an additional 10 minutes.
- Serve with crispy shredded carrots and a hunk of bread.
