Strawberry, Feta and Mint Salad
I picked up a basket of Ontario strawberries from a farm stand when we were driving back from the cottage the other day and I’m enjoying them every way that I can.
What better way to start off enjoying local strawberries than a fresh strawberry salad. Today it’s a simple summery salad of sweet strawberries, salty goat feta, fragrant mint and a raspberry balsamic vinaigrette. Just a few simple ingredients make a delicious summery salad.
Strawberry, Feta and Mint Salad
Ingredients
For the Salad
- 2 cups strawberries, cut in half
- ½ cup goat feta, cubed
- 1 cup fresh mint
- 1 tbsp sesame seeds
For the Vinaigrette
- 1 tsp garlic, finely grated
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 tbsp raspberry vinegar
- 1 tbsp white balsamic
- 2 tbsp olive oil
- Sea salt and ground pepper to taste
Instructions
- Place garlic, dijon, honey, mustard, vinegars, oil salt and pepper in a jar with a tight fitting lid and shake well.
- Place strawberries, feta and mint in a bowl and toss with vinaigrette to coat.
- Sprinkle sesame seeds over and enjoy.
