I made the vegetarian pomegranate, feta and black rice in acorn squash. I love the contrast in colour and texture of the jewel toned pomegranate arils, nutty onyx-coloured rice, creamy feta and crunchy pistachios piled high in a sweet roasted squash. This is a hearty, healthy and filling fall dish.
