Almond Ricotta Cake

Ricotta cheese is a great addition to baked goods. When properly incorporated, ricotta can elevate a cakes flavour without adding any flavour. It’s a mild creamy cheese that adds a light fluffy texture to the cake.

Almond extract and chopped almonds really bring the almond flavour to this cake without compromising the texture of the cake.

An important step in the preparation is to cream together the butter, sugar, and ricotta for 5 minutes to ensure you don’t end up with a dense, flat cake. Then beat in the eggs and almond extract. Add in the flour mixture and chopped almonds.
