Banana Buttermilk Pancakes

Sunday’s are for pancakes. These light and fluffy banana buttermilk pancakes are my favourite, made even better when served with a dollop of labneh, berries and maple syrup.

Banana Buttermilk Pancakes

Ingredients

  • 2 bananas mashed
  • 1 ½ cups buttermilk or kefir
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 ½ cups whole wheat flour
  • ½ tsp baking soda
  • 1 ½ tsp baking powder
  • ½ tsp salt

Instructions

  • Mash the bananas in a large bowl. Add the rest of the ingredients and mix with a fork. Allow to stand for 10 minutes before ladling into a greased hot pan.
