Cardamom Grapefruit Yogurt Cake

I’m obsessed with all things citrus right now, and this grapefruit cake is everything and more. It’s a delicious simple cake made with greek yogurt and fresh grapefruit. It brings just the right amount of sweetness, slightly tart and has a tender crumb. The cardamom spice adds a nice hint of flavour too. This light and refreshing grapefruit greek yogurt cake is drizzled with a grapefruit glaze.

Tip: when zesting the grapefruit, make sure you only grate the pinkish yellow part and not the pith, as it is very bitter. This recipe calls for both zest and juice, so zest the grapefruit first, then cut the grapefruit in half and juice it. 

While this sweet and slightly tart grapefruit cake doesn’t really need a glaze, why stop there. The glaze adds a little something extra. The simple grapefruit glaze is a mix of confectioners sugar, fresh grapefruit juice and vanilla extract.

This citrusy cake needs to make an appearance on your weekend brunch table.

Ingredients

  • 2 ⅓ cups white whole wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cardamom, ground
  • 1 tbsp grapefruit zest, finely grated
  • 2 large eggs
  • 1 cup plain greek yogurt
  • ¾ cup organic sugar
  • ½ cup freshly squeezed grapefruit juice, plus 2 tbsp grapefruit juice reserved for glaze
  • ¾ cup milk of choice
  • cup butter, melted and cooled

For the Glaze

  • 1 cup powdered sugar
  • 2 tbsp grapefruit juice
  • 1 tsp pure vanilla extract

Instructions

  • Preheat oven to 350°F.
  • Grease a loaf pan and line with a parchment sling. Set aside.
  • In a large bowl combine flour, baking powder, baking soda, salt, cardamom and grapefruit zest. Mix to combine and set aside.
  • In a medium bowl whisk together eggs, yogurt and sugar. Gently pour in ½ cup grapefruit juice, milk and cooled butter. Gently stir together.
  • Pour wet ingredients into the bowl of dry ingredients. Use a rubber spatula to gently combine. Avoid over-mixing the batter.
  • Pour cake batter into prepared pan.
  • Bake for 25-35 minutes, or until inserted toothpick comes out with little crumbs.
  • Allow cake to cool in pan for 20 minutes before removing.
  • Make the glaze while cake is cooling: Combine powdered sugar, grapefruit juice and vanilla in a small bowl and whisk until smooth.
  • Once cake has cooled, remove from the pan and place a cooling rack.
  • Place a baking sheet under cooling rack to catch glaze. Pour glaze over cake.
