Cinnamon Apple Cake
I’m baking with apples! That means the seasons are changing and I can’t say I’m ready, but I’m rolling with it.
I made a deliciously easy cinnamon apple cake. This cake has a soft and tender crumb and is packed with sweet apples. Then it’s topped with more apples and a crunchy cinnamon topping.
Cinnamon and apples are a match made in flavour heaven.
Ingredients for the Apple Cake
- all-purpose flour
- baking powder
- baking soda
- sugar
- apples
- eggs
- vanilla
- vegetable oil
- kefir or yogurt
- cinnamon
- butter
Making the Apple Cake
- This Cinnamon Apple Cake is really easy to make. You only need a bowl and spoon.
- Use any kind of apple, I used Ambrosia. The apples must be peeled and cut into small cubes.
- All you have to do is mix the dry ingredients with the wet ingredients.
- The crumble is made with sugar, cinnamon and softened butter.
- Sprinkle the crumble over the top of the cake batter.
- Bake until golden.
Cinnamon Apple Cake
Ingredients
For the Apple Cake
- 210 grams (1½ cups) all purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- 150 grams (¾ cup) organic sugar
- 1½ cups apple, peeled and diced
- 1 apple, cored and sliced
- 2 large eggs
- 1 tsp vanilla extract
- 120 ml (½ cup) vegetable oil
- 120 ml (½ cup) kefir or plain greek yogurt
For the Cinnamon Sugar Topping
- 50 grams (¼ cup) organic sugar
- 1 tsp ground cinnamon
- 1 tbsp unsalted butter melted
Instructions
- Preheat oven to 350°F.
- Grease and line an 8-inch cake tin with parchment paper. I used one with a removable base.
- In a large mixing bowl add flour, baking powder, baking soda and sugar. Add chopped apple and stir to combine.
- In a separate bowl add eggs, vanilla, oil and kefir. Whisk to break up the egg yolks.
- Add wet ingredients to dry ingredients and mix with a wooden spoon until just combined. Spoon batter into prepared tin.
- Top the batter with sliced apples.
For the Cinnamon Sugar Topping
- Combine cinnamon, sugar and butter. Mix together until lumpy and wet. Sprinkle over cake batter.
- Bake cake for approximately 35 minutes or until a skewer inserted into the centre comes out clean. Transfer cake to a rack to cool completely before removing from the cake pan. Recipe inspired by SweetestMenu
