I never get tired of trying different banana bread recipes and I really like the way this one turned out. It baked up extra moist with a rich and tender crumb. It’s made with butter, greek yogurt, plenty of mashed bananas and it’s filled and topped with chocolate chips.

For this quick bread I suggest that you only use ripe bananas and room temperature ingredients.

What you need for this recipe:

  • all-purpose flour
  • baking soda 
  • unsalted butter 
  • plain greek yogurt
  • cocoa powder
  • granulated and brown sugar
  • bananas
  • egg 
  • vanilla extract
  • kosher salt
  • semi-sweet chocolate chips

Note: don’t over-mix the batter.

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ½ cup cocoa powder
  • ½ tsp kosher salt
  • 1 ½ cups bananas, mashed
  • 1 tsp vanilla extract
  • 1 large egg room temperature
  • 55 g butter, melted
  • cup brown sugar
  • cup organic sugar
  • ½ cup plain greek yogurt
  • 1 cup chocolate chips plus more for topping

Instructions

  • Preheat an oven to 350℉.
  • Line a loaf pan with parchment paper.
  • Add bananas to a large mixing bowl and mash with a fork or potato masher.
  • Add melted butter, egg, vanilla extract and greek yogurt.
  • Mix until the mixture is well combined.
  • Add the sugars and stir until dissolved.
  • Add the flour, cocoa powder, kosher salt, baking soda, and mix until just combined.
  • Fold in chocolate chips until combined.
  • Pour the batter into the prepared loaf pan and top the batter with extra chocolate chips.
  • Bake for 50-60 minutes until a toothpick inserted into the banana bread comes out clean.
Let the banana bread cool for at least 20 minutes before removing from the pan.
