Lemon Poppy Seed Loaf

This easy one bowl lemon poppy seed loaf is packed with fresh lemony flavours, just the right amount of poppy seeds and drizzled with a lemony glaze. Brighten up your morning with a slice for breakfast with a cup of tea.

Lemon Poppy Seed Loaf

Ingredients

  • ¼ cup milk
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • 260 g (2 cups) cake and pastry flour
  • 230 g (1 cup) organic sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ cup poppy seeds
  • 3 tbsp fresh lemon juice

For the Glaze

  • ¼ cup powdered sugar
  • 3-4 tbsp lemon juice

Instructions

  • Preheat oven to 325°F. Spray a 12" x 4 ½" loaf pan with cooking spray and line with a parchment sling (makes the removal so easy).
  • In the bowl of a stand mixer, beat milk, eggs and vanilla until combined. Add the butter and mix again. The mixture may look curdled, don’t worry it will all come together). Finally add the flour, sugar, baking powder and salt and mix well.
  • Stir in the poppy seeds and lemon juice.
  • Pour the batter into the prepared pan.
  • Bake in preheated oven for 60 – 65 minutes, or until toothpick inserted in centre comes out clean. Cool on rack for 15 minutes, then remove from pan.
  • Prepare lemon glaze – mix the powdered sugar and lemon juice until sugar is dissolved. Spoon over the top of the loaf once it’s cooled.
