Mango Passion Fruit Popsicles
I love the tie dye swirls in these tropical vegan popsicles with the passion fruit popping through. Just 4 ingredients go into these refreshing summery popsicles.
mango purée
passion fruit pulp
coconut milk
maple syrup
It’s as easy as this:
Purée the passion fruit and mango until smooth.
Strain for a smooth purée, but save the seeds to add for effect (optional). I like the way they look.
Mix coconut milk with maple syrup.
Layer the purée and coconut milk in popsicle molds.
Swirl with a skewer to get the tie dye effect.
Freeze until solid.
Mango Passion Fruit Popsicles
Ingredients
- 2 cups mango, fresh or frozen
- ¼ cup passion fruit pulp, about 3 passion fruit
- 1 can coconut milk, not light
- 3 tbsp maple syrup or honey
Instructions
- Cut the passion fruit in half and scoop out the pulp with a spoon.
- Add to a blender with the mango and purée until smooth.
- Strain the fruit purée mixture to remove any large seeds.
- Save some of the seeds to add later.
- Mix the coconut milk and maple syrup together until smooth.
- Spoon the fruit puree in layers with the coconut milk until the mold is full.
- Drop in a few passion fruit seeds and swirl the mixture with a skewer.
- Place a popsicle stick into each popsicle and freeze for at least 6 – 8 hours.
- Check after an hour to make sure the popsicle sticks are straight and make any adjustments.
