Spicy Noodles
How do you feel about spicy noodles? It’s one of my favourite takeout dishes. I’m vegetarian and I always worry that the dish I’m getting may have “stuff” in there that I don’t want to eat (I’ve had a few surprises in my life). So I’m always trying to make “my” perfect spicy noodles. This one came pretty close.
Just a bowl of spicy noodles. I tossed this twisted tangle of brown rice noodles with sautéed leeks and green onions. A simple and most delicious dish.
Spicy Noodles
Ingredients
- 10 ounces brown rice noodles cooked and drained
- 3 tbsp neutral oil
- 1 garlic clove minced (about 2 tbsp)
- 1 tbsp ginger finely chopped
- 1 bunch leeks thinly sliced
- 4 green onions thinly sliced (reserve some for garnish)
- 1 tsp gochujang or more if you like spice
- 3 tbsp low-sodium soy sauce
- 2 tsp sesame oil
- 2 tsp sesame seeds
Instructions
- Heat a large skillet over medium heat, then add the oil. Add the garlic and ginger and sauté until fragrant, stirring often.
- Add leeks and green onions and sauté, stirring often, until the leeks have softened.
- Add cooked noodles, gochujang, soy sauce and sesame oil, and toss to combine.
- Divide equally into bowls. Top each serving with sesame seeds and green onions. Serve immediately.
