Spicy Peanut Soup

Spicy Peanut Soup with Sweet Potatoes and Kale is a creamy nutritious soup packed with flavour, spice and only good things. Oh and it’s vegan. 

Yes – peanut butter, tomatoes and kale may seem like an unusual combination, but I hope you will give this one a try. A bowl of this deliciousness will warm you up and leave you satisfied. 

Spicy Sweet Potato Peanut Soup

Ingredients

  • 2 tbsp olive oil
  • 1 shallot diced
  • 1 clove garlic grated
  • 1 tsp yellow curry
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp crushed coriander
  • 1 tsp Aleppo pepper
  • 1 tsp sea salt
  • 2 large sweet potatoes peeled and cubed
  • 2 cups diced tomatoes
  • 1 14-ounce can unsweetened coconut milk
  • 2 cups low sodium vegetable stock
  • 2 tbsp tomato paste
  • ½ cup chopped peanuts save a few for serving
  • ¼ cup peanut butter
  • 1-2 cups kale chopped
  • ¼ cup chopped parsley

Instructions

  • Heat olive oil in a large pot over medium heat and add shallot and garlic. Sauté until soft and fragrant. Add sweet potatoes and brown them for a few minutes.
  • Add curry, turmeric, cumin, coriander, Aleppo and salt. Stir well to coat the veggies and cook until fragrant.
  • Add tomatoes, coconut milk, vegetable stock, tomato paste and peanuts. Simmer until sweet potatoes are tender.
  • Add peanut butter and kale. Cover and simmer until soup is thick. Serve with chopped parsley and more peanuts.
