Spicy Sweet Potato Peanut Soup

Spicy Sweet Potato Peanut Soup
Ingredients
- 2 tbsp olive oil
- 1 shallot diced
- 1 clove garlic grated
- 1 tsp yellow curry
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp crushed coriander
- 1 tsp Aleppo pepper
- 1 tsp sea salt
- 2 large sweet potatoes peeled and cubed
- 2 cups diced tomatoes
- 1 14-ounce can unsweetened coconut milk
- 2 cups low sodium vegetable stock
- 2 tbsp tomato paste
- ½ cup chopped peanuts save a few for serving
- ¼ cup peanut butter
- 1-2 cups kale chopped
- ¼ cup chopped parsley
Instructions
- Heat olive oil in a large pot over medium heat and add shallot and garlic. Sauté until soft and fragrant. Add sweet potatoes and brown them for a few minutes.
- Add curry, turmeric, cumin, coriander, Aleppo and salt. Stir well to coat the veggies and cook until fragrant.
- Add tomatoes, coconut milk, vegetable stock, tomato paste and peanuts. Simmer until sweet potatoes are tender.
- Add peanut butter and kale. Cover and simmer until soup is thick. Serve with chopped parsley and more peanuts.
