Vegetarian Split Pea Soup

This chunky vegetarian split pea soup is every bit as delicious as the soup that my mom used to make. It is simply – green split peas, onions, carrots and celery cooked until tender, partially pureed and seasoned. It’s a really easy one to make, so comforting and very nostalgic for me.

Vegetarian Split Pea Soup

Ingredients

  • 6 cups low sodium vegetable broth
  • 2 garlic cloves minced
  • 1 medium onions chopped
  • 1 cup carrots chopped
  • 2 celery stalks chopped
  • 2 cups dried green split peas rinsed
  • ¼ cup celery leaves chopped
  • ¼ cup parsley chopped
  • ½ tsp ground cumin
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • salt and pepper to taste

Instructions

  • In a large saucepan, combine all ingredients and bring to a boil.
  • Stir well, reduce heat, cover and simmer for 1 hour until peas are tender.
  • Check for seasoning. Cool slightly before blending the soup with a hand blender. Return to heat and simmer for an additional 10 minutes.
  • Serve with crispy shredded carrots and a hunk of bread.
