Colourful Crunchy Cabbage and Apple Slaw
Happy Friday friends. The weather is warming up (we are hitting double digits for the second day in a row – yay!) so it’s time to start thinking about spending more time outside and hopefully having a picnic very soon.
This colourful crunchy cabbage and apple slaw would be the perfect salad. The colours and textures make me very happy. I love how the humble cabbage can get all dressed up with a few other brightly coloured veggies, crunchy apples and toasted pumpkin seeds to make this gorgeous salad. It’s tossed with a subtly sweet and tangy tahini dressing and finished with toasted pumpkin seeds. It’s a great compliment to any meal.
Colourful Crunchy Cabbage and Apple Slaw
Ingredients
- 2 cups red cabbage shredded
- 2 apples julienned
- 2 carrots shredded
- 2 green onions thinly sliced
- 1 stalk celery thinly sliced
- ¼ cup parsley chopped
- ¼ cup celery leaves chopped
- 3 tbsp pumpkin seeds toasted
- 2 tsp sesame seeds
For the Dressing
- ⅓ cup tahini
- 3 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 2 tsp maple syrup
- Sea salt and pepper
Instructions
For the Salad
- Place all ingredients except pumpkin seeds in a large bowl. Toss with ½ the dressing and add more as needed. Add pumpkin seeds just before serving.
For the Dressing
- Place all the dressing ingredients in a jar and shake well until combined. If the dressing is too thick, add a tablespoon or two of water. Inspired by Two Spoons.
