Chocolate Raisin Banana Oatmeal Bars

Here is a healthy option for a quick and easy snack bar with no refined sugar. Chocolate is optional, but why leave it out. Chocolate makes everything better.

Chocolate Raisin Banana Oatmeal Bars

Ingredients

  • 2 bananas mashed
  • 2 large free range organic eggs
  • ½ cup honey
  • 1 tsp vanilla paste or extract
  • cups Rogers Grains breakfast oats (any kind of oats will do)
  • cups wholewheat flour
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup raisins
  • ½ cup unsweetened shredded coconut
  • ½ cup semi-sweet chocolate chopped

Instructions

  • Preheat oven to 350 °F. Spray a 9×9 pan with non-stick spray and line with parchment paper.
  • In a large bowl, mash the bananas, add the eggs, honey and vanilla and stir until combined.
  • Add the oats, flour, cinnamon, baking soda and salt. Mix until combined.
  • Stir in the chocolate, raisins and coconut.
  • Pour into prepared pan and bake for 20 minutes.
  • Allow to cool before cutting.
  • Optional: drizzle with melted chocolate.
