Grilled Halloumi, Strawberries and Herbs
The days are warmer and the sun is setting later. That means we have more time to spend in the backyard. This is a simply delicious and perfect dish for a warm evening with a glass of wine. Halloumi and strawberries are a match made in flavour heaven.
Sweet juicy strawberries macerated in a lime vinaigrette, draped over golden salty halloumi with hot honey and mint makes a lovely summery appetizer or light meal with grilled bread.
Grilled Halloumi, Strawberries and Herbs
Ingredients
- 4 tbsp extra-virgin olive oil, divided
- 2 tbsp lime juice, freshly squeezed
- 2 tsp hot honey
- ½ serrano chile, seeds removed, minced
- ground black pepper
- 6 ounces strawberries, sliced
- 1 package halloumi cheese, cut into 8 slices
- 2 tbsp fresh mint, chopped
Instructions
- For the Dressing: whisk together 3 tablespoons oil, lime juice, honey, chile and pepper to taste in a jar.
- Add strawberries and set aside.
- Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. When hot, add halloumi slices.
- Cook cheese for 2-3 minutes per side without disturbing, until a golden crust forms.
- Remove cheese from skillet and place on a serving plate. Spoon the strawberry mixture over the cheese. Top with mint and serve immediately, while cheese is still warm.Inspired by Epicurious.
