Zucchini Fritters with Peach Salsa

Zucchini fritters happened because we have a load of zucchini’s in the veggie garden. I’ve topped them with a zesty peach salsa because now is the time to embrace all the summer flavours. The flavours in these slightly salty fritters and the sweet and tangy peach salsa work so well together.

These fritters are so easy to make. All you have to do is grate the zucchini, drain them and squeeze out as much liquid as you can, and mix the grated zucchini in a bowl with all the other ingredients. Once the mixture is made, drop spoons full into a hot skillet. Cook until golden on one side, flip and cook until golden on the other side.

Just a few ingredients go into these tender bites: grated zucchini, egg, parmesan, flour, garlic, salt and pepper.

Serve them with this summery peach salsa as an appetizer or side dish.

This peach salsa would work really well with frilled fish or even on crostini with a shmeer of goat cheese.

Zucchini Fritters with Peach Salsa

Ingredients

Zucchini Fritters

  • 3 cups zucchini, grated
  • 1 tsp sea salt
  • 1 large egg, beaten
  • ¼ cup all-purpose flour
  • ¼ cup parmesan, grated
  • 1 clove garlic, minced
  • salt and ground black pepper, to taste
  • 2 tbsp olive oil

Peach Salsa

  • 3 peaches, diced
  • ½ red bell pepper, seeded and diced
  • ½ jalapeño, seeded and diced
  • 1 green onion, thinly sliced
  • basil and parsley, chopped
  • 2 tbsp lime juice
  • ½ tsp sea salt
  • ¼ tsp ground black pepper

Instructions

Zucchini Fritters

  • Place grated zucchini in a colander over a bowl and sprinkle with salt. Toss to combine and let sit for 10 minutes. Squeeze as much liquid out of the zucchini. Then place zucchini on a clean dish towel and drain the zucchini again.
  • In a large bowl, combine zucchini, egg, flour, Parmesan and garlic. Season with salt and pepper, to taste.
  • Heat oil in a large skillet over medium-high heat.
  • Spoon tablespoons of batter for each fritter into the skillet, flattening with a spatula. Cook until the underside is golden brown, about 2 minutes. Flip and cook on the other side, about 1-2 minutes longer.

Peach Salsa

  • Cut and dice all the ingredients and place in a small bowl.
  • Toss together with lime juice.
  • Season with salt and pepper.
  • Serve alongside the fritters.
