Sweet Potato Oatmeal Loaf
Have you ever baked with sweet potatoes? This is a first for me.
I was inspired by the lovely and very talented Sonia @saltnpepperhere, who posted stories of her and her cute little daughter Elise making sweet potato muffins.
So I got thinking about the delicious earthiness of sweet potatoes and how much I love these versatile orange gems. I came up with this sweet potato oatmeal loaf with spiced almond oatmeal streusel topping.
Sweet Potato Oatmeal Loaf
Ingredients
- 1 cup sweet potato, cooked and mashed
- 1 cup milk
- 2 large eggs
- ¼ cup butter, melted
- ¾ cup all purpose flour
- ¾ cup wholewheat flour
- ½ cup Rogers original porridge oats, my preferred choice
- ¼ cup white sugar
- ¼ cup brown sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- ½ tsp allspice
- ¼ tsp salt
Streusel Topping
- 2 tbsp brown sugar
- 2 tbsp ground almonds
- 1 tbsp wholewheat flour
- 1 tbsp butter
- 1 tsp Spice Trader baking spice
- 1 tbsp chopped walnuts
- 1 tsp sesame seeds
Instructions
- Beat sweet potatoes, milk and egg until smooth; add butter.
- Combine flour, oats, sugar, baking powder, spices and salt.
- Stir into sweet potato mixture just until blended.
- Pour batter batter into a greased loaf pan.
- Combine streusel ingredients and sprinkle on top, gently pressing.
- Bake at 400F for 20-25 minutes
