Apple and Cheddar Biscuits
Biscuits or scones, call them whatever you want. I call these sweet and savoury apple and cheddar biscuits delicious! Oh and they’re studded with ribbons of sage. They are a wonderful addition to any breakfast plate, with a bowl of soup, on a cheese board or save the recipe for your thanksgiving bread basket.

The Ingredients:
- Use tart apples that hold up well. I like Granny Smith.
- Sharp cheddar or smoked cheddar are a good choice.
- Fresh sage adds so much flavour and makes for such a pretty presentation.
How do Make the Dough:
The quickest and easiest way to make this flaky dough is in a food processor.
- Pulse the dry ingredients together to get everything combined.
- Work with cold butter, cut in cubes.
- Pulse butter with the dry ingredients until just combined and there are pea sized chunks of butter.
- Add the liquid while continuing to pulse until the dough forms a ball.
- Dump the dough on the counter and press or roll into a rectangle.
- Cut the biscuits and place on a parchment lined baking sheet.
- Brush the tops lightly with milk and gently press a sage leaf on top.
Apple and Cheddar Biscuits
Ingredients
- 2 ¼ cups all purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- 1 tbsp organic sugar
- ½ cup (1 stick) unsalted butter, cold, cut into pieces
- ½ cup milk buttermilk or kefir
- 1 cup granny smith apple, finely chopped
- 1 cup extra old cheddar cheese, shredded
- ¼ cup finely chopped fresh sage leaves, plus a few leaves for the tops of the biscuits
- 2 tbsp milk for brushing
Instructions
- Preheat oven to 375°F and line a baking sheet with parchment.
- Place the flour, baking powder, salt and sugar in the bowl of a food processor and pulse a few times to combine.
- Add the butter to the food processor, and continue to pulse until the mixture is coarse and crumbly.
- Slowly add in the milk and pulse until the dough comes together in a ball.
- Remove the dough from the food processor and place in a mixing bowl with the chopped apple, shredded cheese and sage. Mix by hand until everything is combined. Try not to over-mix.
- Place the dough on a lightly floured surface and pat or gently roll into a rectangle about 1-inch thick.
- Using a 2 ½-inch cookie cutter, cut 8-10 biscuits and place them on prepared baking sheet.
- Brush the tops of the biscuits with milk and place a small sage leaf or two on top of each biscuit, brushing with more milk to hold the sage leaf in place.
