Apple and Cheddar Biscuits

Course Side Dish

Ingredients

  • 2 ¼ cups all purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 tbsp organic sugar
  • ½ cup (1 stick) unsalted butter, cold, cut into pieces
  • ½ cup milk buttermilk or kefir
  • 1 cup granny smith apple, finely chopped
  • 1 cup extra old cheddar cheese, shredded
  • ¼ cup finely chopped fresh sage leaves, plus a few leaves for the tops of the biscuits
  • 2 tbsp milk for brushing

Instructions

  • Preheat oven to 375°F and line a baking sheet with parchment.

  • Place the flour, baking powder, salt and sugar in the bowl of a food processor and pulse a few times to combine. 

  • Add the butter to the food processor, and continue to pulse until the mixture is coarse and crumbly.
  • Slowly add in the milk and pulse until the dough comes together in a ball.
  • Remove the dough from the food processor and place in a mixing bowl with the chopped apple, shredded cheese and sage. Mix by hand until everything is combined. Try not to over-mix. 

  • Place the dough on a lightly floured surface and pat or gently roll into a rectangle about 1-inch thick.
  • Using a 2 ½-inch cookie cutter, cut 8-10 biscuits and place them on prepared baking sheet.
  • Brush the tops of the biscuits with milk and place a small sage leaf or two on top of each biscuit, brushing with more milk to hold the sage leaf in place.
