Oatmeal Lace Cookies
Oatmeal lace cookies are thin, crunchy and buttery, with a crispy texture. These cookies get their name from their delicate and see-through appearance.
They are as easy as mixing all the ingredients in one bowl, dropping spoons full of the batter onto parchment lined baking sheets and baked for just a few minutes. Keep an eye on them as they bake. They will bubble, flatten, and spread. They are ready when they are a light golden-brown colour and they stop bubbling. Be careful, even a minute too long in the oven can end up burning them, and if they don’t bake long enough they won’t crisp up properly as they cool.
I sandwiched them with a layer of chocolate for an extra special treat. This step is optional, but so worthwhile.
A warning though, these cookies are buttery and oh so addictive. It’s impossible to just eat one!
Oatmeal Lace Cookies
Ingredients
- ½ cup butter
- ¾ cup white sugar
- 1 egg, beaten
- 1 cup quick cooking oats
- 3 tbsp all-purpose flour
- 1 tsp vanilla extract
- ¼ tsp salt
- ¼ tsp baking powder
For the Chocolate Filling
- ¾ cup semi-sweet chocolate, melted
Instructions
- Preheat the oven to 350°F. Line 2 baking sheets with parchment paper.
- Melt butter in a microwave. Add sugar and stir to combine. Add beaten egg and mix well.
- Stir in oats, flour, vanilla extract, salt and baking powder.
- Drop teaspoonfuls of dough 2 inches apart onto the prepared baking sheets. Bake in the preheated oven until edges are golden brown, about 8 minutes.
- Let cool completely before removing cookies from pan.
To Assemble
- Melt the chocolate in the microwave.
- Spread a thin layer on a cookie and gently place another cookie on top.
