Braised Green Beans with Potatoes
Today’s comfort food involves braised green beans in a hearty tomato sauce with potatoes and herbs. I’ve seen many different versions of this dish from all over the world, and this is mine.
Serve with a slice of feta and a big hunk of crusty bread to soak up the delicious braising broth, that’s made from olive oil, tomatoes, garlic, onions and herbs. Or keep it vegan and serve this garlicky tomatoey comfort food straight out of the pan as is.
The most important tip for braising these green beans is to lay them over the potatoes and don’t stir for the first 15 minutes. Just let them cook on top of the potatoes and the hearty tomato sauce.
This nutritious and delicious, green bean dish can be made as a side or as a main course.
Braised Green Beans with Potatoes
Ingredients
- ¼ cup olive oil
- 1 medium onion, chopped
- 2 garlic cloves, finely chopped
- 2 cups tomatoes, diced
- 2 tbsp tomato paste
- 3 medium potatoes, cut into large pieces
- 1 lb green beans, trimmed
- 1 tbsp fresh dill
- 2 tbsp fresh parsley, chopped
- 1½ cups low sodium vegetable stock
- ½ tsp crushed red pepper flakes or aleppo pepper
- 1 tsp salt
- ¼ tsp freshly ground pepper
Instructions
- Heat olive oil over a medium high heat in a large saucepan.
- Add onion and garlic and cook until soft and fragrant.
- Add tomatoes and tomato paste and cook for another 5 minutes.
- Add the potatoes and stir thoroughly to combine.
- Add the green beans by laying them on top of the potato mixture. Don’t stir.
- Sprinkle dill and parsley over the green beans and enough vegetable stock to just cover the beans.
- Cover and allow to simmer for 15 minutes.
- Uncover, stir everything together and season with salt and pepper. Lower the heat, cover and cook for another 15 minutes, until the potatoes are tender.
- Serve with feta cheese and crusty bread to soak up the sauce.
