Heat olive oil over a medium high heat in a large saucepan.
Add onion and garlic and cook until soft and fragrant.
Add tomatoes and tomato paste and cook for another 5 minutes.
Add the potatoes and stir thoroughly to combine.
Add the green beans by laying them on top of the potato mixture. Don’t stir.
Sprinkle dill and parsley over the green beans and enough vegetable stock to just cover the beans.
Cover and allow to simmer for 15 minutes.
Uncover, stir everything together and season with salt and pepper. Lower the heat, cover and cook for another 15 minutes, until the potatoes are tender.
Serve with feta cheese and crusty bread to soak up the sauce.
