Braised Green Beans with Potatoes

Ingredients

  • ¼ cup olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, finely chopped
  • 2 cups tomatoes, diced
  • 2 tbsp tomato paste
  • 3 medium potatoes, cut into large pieces
  • 1 lb green beans, trimmed
  • 1 tbsp fresh dill
  • 2 tbsp fresh parsley, chopped
  • cups low sodium vegetable stock
  • ½ tsp crushed red pepper flakes or aleppo pepper
  • 1 tsp salt
  • ¼ tsp freshly ground pepper

Instructions

  • Heat olive oil over a medium high heat in a large saucepan.
  • Add onion and garlic and cook until soft and fragrant.
  • Add tomatoes and tomato paste and cook for another 5 minutes.
  • Add the potatoes and stir thoroughly to combine.
  • Add the green beans by laying them on top of the potato mixture. Don’t stir.
  • Sprinkle dill and parsley over the green beans and enough vegetable stock to just cover the beans.
  • Cover and allow to simmer for 15 minutes.
  • Uncover, stir everything together and season with salt and pepper. Lower the heat, cover and cook for another 15 minutes, until the potatoes are tender.
  • Serve with feta cheese and crusty bread to soak up the sauce.
