Hot Spinach and Artichoke Dip

When it comes to the SuperBowl, I’m here for the halftime show, the commercials and the food. In between all of that, they say there’s a big game. 

I’ve been seeing a lot of posts of what people are making. All the wings, nachos, chilli, burgers, sausages, hotdogs and pizza are making my head spin. 

Here’s one of my favourites – Hot Spinach and Artichoke Dip. It’s an oldie and a goodie. It’s deliciously rich, perfectly creamy and cheesy, brimming with spinach and artichokes and it’s always a favourite around here.  

Hot Spinach and Artichoke Dip

Course Appetizer

Ingredients

  • 1 – 8 ounce package herb cream cheese, softened (I used Boursin cheese)
  • ¼ cup mayonnaise
  • ¼ cup grated Parmesan cheese
  • ¼ cup grated Romano cheese
  • 1 clove garlic peeled and minced
  • ½ tsp dried basil
  • ¼ tsp garlic salt
  • Salt and pepper to taste
  • 1 – 14 ounce can artichoke hearts, drained and roughly chopped
  • ½ cup frozen chopped spinach thawed and well drained
  • ¼ cup shredded mozzarella cheese

Instructions

  • Preheat oven to 350°F.
  • Lightly grease a small baking dish.
  • In a medium bowl, mix together cream cheese, mayonnaise, Parmesan cheese, Romano cheese, garlic, basil, salt and pepper.
  • Gently stir in artichoke hearts and spinach.
  • Transfer the mixture to the prepared baking dish.
  • Top with mozzarella cheese.
  • Bake in the preheated oven 25 minutes, until bubbly and lightly browned.
  • Serve with pita, naan and/or crackers.
