Apple Pie Overnight Oats
I picked up a lot of apples from a local apple orchard and I’ve been enjoying baking and cooking with them. Check out my feed to see what I’ve been up to. For all of you waiting for the final bake of my apple focaccia, I’m working on getting the recipe posted. It turned out really well.
What do you think of apple pie overnight oats? It’s been a while since I made them and I’m thinking that eating dessert for breakfast is a good thing. I’m loving the cozy flavours of these honeycrisp apple pie oats topped with dark chocolate puffed quinoa. This is a delicious healthy way to start the day.
What You Need For Apple Pie Overnight Oats
- oats – rolled oats are the best for overnight oats.
- apples – honeycrisp apples are the star of show, but any variety of apples would work.
- milk – I used unsweetened vanilla almond milk, but any whatever milk you prefer.
- yogurt – I like the flavour of vanilla greek yogurt, but you can use plain or non-dairy yogurt.
- maple syrup – it’s the perfect natural sweetener. Honey or agave will work too.
- pure vanilla adds extra flavour.
- apple pie spice.
For the Cinnamon Apple Topping
The cinnamon apple topping is an extra step, but so worth it.
- chop apples into bite sized pieces.
- mix the apple pieces, maple syrup and cinnamon in a microwave-safe bowl.
- stir together to coat the apples.
- heat in the microwave for about 1 minute until the apples have softened a bit.
Apple Pie Overnight Oats
Ingredients
For the Cinnamon Apples
- ½ cup chopped apple
- 1 tsp maple syrup
- pinch of cinnamon
- ¼ cup pecans, chopped
For the Overnight Oats
- ½ cup old fashioned oats
- ½ – ¾ cup milk of your choice
- ¼ cup vanilla greek yogurt
- 2 tsp maple syrup
- ½ tsp vanilla
- ½ tsp apple pie spice
Topping of Your Choice
- cinnamon apples, nut butter, chopped nuts, chocolate puffed quinoa or hemp seeds
Instructions
For the Cinnamon Apples
- Add chopped apple pieces, maple syrup and cinnamon in a microwave-safe bowl. Stir together to coat apples.
- Heat for 45 – 60 seconds, until apples have softened.
- Stir in chopped pecans.
- Let cool and reserve ¼ cup of the apples for the topping.
For the Overnight Oats
- Mix oats, milk, yogurt, maple syrup, vanilla and apple pie spice in a bowl.
- Add ¼ cup of the cinnamon apples to the oat mixture and stir to combine.
- Spoon the mixture into a mason jar and cover with a lid.
- Place in the fridge overnight.
- In the morning, remove from the fridge.
- At this stage you can add a tablespoon of yogurt or almond milk if it seems too thick.
- Top with extra ¼ cup apples and your favourite toppings. Enjoy!
