Mix oats, milk, yogurt, maple syrup, vanilla and apple pie spice in a bowl.
Add ¼ cup of the cinnamon apples to the oat mixture and stir to combine.
Spoon the mixture into a mason jar and cover with a lid.
Place in the fridge overnight.
In the morning, remove from the fridge.
At this stage you can add a tablespoon of yogurt or almond milk if it seems too thick.
Top with extra ¼ cup apples and your favourite toppings. Enjoy!
