Apple Pie Overnight Oats

Ingredients

For the Cinnamon Apples

  • ½ cup chopped apple
  • 1 tsp maple syrup
  • pinch of cinnamon
  • ¼ cup pecans, chopped

For the Overnight Oats

  • ½ cup old fashioned oats
  • ½ - ¾ cup milk of your choice
  • ¼ cup vanilla greek yogurt
  • 2 tsp maple syrup
  • ½ tsp vanilla
  • ½ tsp apple pie spice

Topping of Your Choice

  • cinnamon apples, nut butter, chopped nuts, chocolate puffed quinoa or hemp seeds

Instructions

For the Cinnamon Apples

  • Add chopped apple pieces, maple syrup and cinnamon in a microwave-safe bowl. Stir together to coat apples.
  • Heat for 45 - 60 seconds, until apples have softened.
  • Stir in chopped pecans.
  • Let cool and reserve ¼ cup of the apples for the topping.

For the Overnight Oats

  • Mix oats, milk, yogurt, maple syrup, vanilla and apple pie spice in a bowl.
  • Add ¼ cup of the cinnamon apples to the oat mixture and stir to combine.
  • Spoon the mixture into a mason jar and cover with a lid.
  • Place in the fridge overnight.
  • In the morning, remove from the fridge.
  • At this stage you can add a tablespoon of yogurt or almond milk if it seems too thick.
  • Top with extra ¼ cup apples and your favourite toppings. Enjoy!
