Citrus Fennel Salad

Making the most of the available citrus with this simple winter salad that will brighten up any day.

Today’s citrus and fennel salad is a really delicious combination. It’s made with sliced caca cara oranges, blood oranges, grapefruit, clementines and lime, shaved fennel and toasted cashews. Then it’s finished with a refreshing citrus dressing.

 

Citrus Fennel Salad

Homemade dressings are the only dressings that happen around here. They’re really simple and can be made in a mason jar and a little shaking. A homemade dressing elevates any salad and lets you adjust the flavours to your personal preference. For this citrus dressing, combine the following ingredients in a jar and shake shake shake.

Simple Citrus Dressing

  • Olive oil
  • Fresh orange juice
  • Champagne vinegar or white balsamic vinegar
  • Honey 
  • Dijon mustard
  • Salt and pepper to taste

It’s a refreshing, light, and flavour filled salad.

Citrus Fennel Salad

Course Salad

Ingredients

  • 1 cara cara orange, peeled, thinly sliced
  • 1 blood orange, peeled, thinly sliced
  • 1 ruby red grapefruit, peeled, thinly sliced
  • 1 clementine, peeled, thinly sliced
  • 1 lime, peeled, thinly sliced
  • ¼ cup fennel, shaved or thinly sliced
  • 2 tbsp pomegranate arils
  • 2 tbsp fennel fronds
  • ¼ cup cashews, toasted and chopped
  • salt and pepper to taste

For the Dressing

  • 3 tbsp champagne or white balsamic vinegar
  • 3 tbsp orange juice, freshly squeezed
  • ¼ cup olive oil
  • 1 tsp dijon mustard
  • 1 tbsp honey
  • salt and pepper

Instructions

  • Peel and slice the citrus. Place on a serving dish with the shaved fennel, pomegranate and fennel fronds.
  • Drizzle with a few tablespoons dressing.
  • Sprinkle with toasted cashews before serving.

For the Dressing

  • Place all ingredients in a jar with a tight fitting lid and shake well.
