Citrus Fennel Salad

Ingredients

cara cara orange,
peeled, thinly sliced

blood orange,
peeled, thinly sliced

ruby red grapefruit,
peeled, thinly sliced

clementine,
peeled, thinly sliced

lime,
peeled, thinly sliced

fennel,
shaved or thinly sliced

tbsp
pomegranate arils
2
tbsp
fennel fronds
¼
cup
cashews,
toasted and chopped
salt and pepper to taste
For the Dressing

tbsp
champagne or white balsamic vinegar
3
tbsp
orange juice,
freshly squeezed
¼
cup
olive oil
1
tsp
dijon mustard
1
tbsp
honey
salt and pepper
Instructions
Peel and slice the citrus. Place on a serving dish with the shaved fennel, pomegranate and fennel fronds.
Drizzle with a few tablespoons dressing.
Sprinkle with toasted cashews before serving.
For the Dressing
Place all ingredients in a jar with a tight fitting lid and shake well.
