Farfel Tart

This Farfel Tart is an old handed-down recipe from my grandmother. Simply described as a buttery vanilla cookie base with a sweet surprise layer of jam, topped with a crunchy shortbread like topping. One piece is never enough. 

This unfussy sweet treat brings back so many delicious memories. It made me think back to when I used to go watch/help my Bubbie (grandmother) cook and bake. She was exceptional at both. Most times there was never really a recipe. It was a bit of this and a hand full of that, with a pinch of something else. I was very excited to find my grandmother’s original handwritten recipe – yes this one was actually written down.

Farfel Tart

Course Dessert

Ingredients

  • ¼ lb butter room temperature
  • ½ cup raw sugar
  • 1 tbsp canola oil
  • 1 egg room temperature
  • 2 tsp pure vanilla
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • Pinch of salt
  • 2 cups strawberry, raspberry or apricot jam
  • Powdered sugar for dusting

Instructions

  • Preheat oven to 350°F.
  • Spray an 8” square pan or cookie sheet and line with parchment paper.
  • In the bowl of a stand mixer, cream butter, sugar and oil. Add the egg.
  • Slowly add the flour and the rest of the ingredients to mixture (except jam).
  • This will be a firm dough.
  • Press half of the dough into the base of the pan.
  • Warm the jam and spread over the base.
  • Grate or crumble the rest of the dough over the jam and bake for 40 minutes or until golden.
  • Allow to cool completely, dust with powdered sugar and cut into squares.

    Great recipe. I got this recipe from My Mother who got it from her Mother. Dates back to the 1950’s. Delicious
