Spray an 8” square pan or cookie sheet and line with parchment paper.
In the bowl of a stand mixer, cream butter, sugar and oil. Add the egg.
Slowly add the flour and the rest of the ingredients to mixture (except jam).
This will be a firm dough.
Press half of the dough into the base of the pan.
Warm the jam and spread over the base.
Grate or crumble the rest of the dough over the jam and bake for 40 minutes or until golden.
Allow to cool completely, dust with powdered sugar and cut into squares.
