Fluffy Buttermilk Pancakes

I take my Sunday pancakes very seriously. Today we’re having fluffy buttermilk pancakes. The secret ingredient to the best pancakes is buttermilk which makes them light, soft and fluffy with the perfect balance of sweet and tangy. Instead of syrup, serve them with a slather of Nutella and cookie butter and you will be the Sunday breakfast hero. Oh and I also topped them off with a buttery lace cookie and cookie crumbles.

Fluffy Buttermilk Pancakes

Ingredients

  • 1 ¼ cups white whole-wheat flour
  • 1 tbsp baking powder
  • 2 tbsp raw sugar
  • 1 tsp salt
  • 4 tbsp butter, melted
  • 1 large egg
  • 1 cup buttermilk
  • 2 tsp pure vanilla extract

Instructions

  • Place flour, baking powder, sugar and salt into a large bowl and whisk together. Set aside.

  • Melt butter in a bowl in the microwave. Whisk the egg, buttermilk and vanilla together and stir in the melted butter.

  • Add the wet mixture to the dry and mix until combined. 

  • Melt 1 tsp butter in a large pan over medium-high heat.
  • Once melted add about ⅓ cup of batter to the pan. 

  • Cook for a few minutes until golden. Flip and cook an additional minute.
  • Serve with butter and syrup.
