Hot Spinach and Artichoke Dip
When it comes to the SuperBowl, I’m here for the halftime show, the commercials and the food. In between all of that, they say there’s a big game.
I’ve been seeing a lot of posts of what people are making. All the wings, nachos, chilli, burgers, sausages, hotdogs and pizza are making my head spin.
Here’s one of my favourites – Hot Spinach and Artichoke Dip. It’s an oldie and a goodie. It’s deliciously rich, perfectly creamy and cheesy, brimming with spinach and artichokes and it’s always a favourite around here.
Hot Spinach and Artichoke Dip
Ingredients
- 1 – 8 ounce package herb cream cheese, softened (I used Boursin cheese)
- ¼ cup mayonnaise
- ¼ cup grated Parmesan cheese
- ¼ cup grated Romano cheese
- 1 clove garlic peeled and minced
- ½ tsp dried basil
- ¼ tsp garlic salt
- Salt and pepper to taste
- 1 – 14 ounce can artichoke hearts, drained and roughly chopped
- ½ cup frozen chopped spinach thawed and well drained
- ¼ cup shredded mozzarella cheese
Instructions
- Preheat oven to 350°F.
- Lightly grease a small baking dish.
- In a medium bowl, mix together cream cheese, mayonnaise, Parmesan cheese, Romano cheese, garlic, basil, salt and pepper.
- Gently stir in artichoke hearts and spinach.
- Transfer the mixture to the prepared baking dish.
- Top with mozzarella cheese.
- Bake in the preheated oven 25 minutes, until bubbly and lightly browned.
- Serve with pita, naan and/or crackers.
