Kale and Brussels Sprout Caesar Salad
This kale and brussels sprout Caesar salad is simply delicious. With just four ingredients other than the dressing – kale, brussels, pomegranate arils and parmesan crisps. No need for croutons as there’s lots of crunch from the other ingredients.
For the salad ingredients all you need to do is shred the greens. In this case kale and raw brussels sprouts, but you can use just romaine or any other greens will work. Add the pomegranate (1/2 cup) and parmesan cheese. If you want to make parmesan crisps – grate the parmesan, place in mounds on a lined baking sheet and melt in a 400 °F for 3-5 minutes until golden. Once cooled, break it up into large pieces.

Ingredients
Caesar Salad Dressing
- 3 tbsp mayo
- 1 tbsp Dijon
- 1 tbsp Worcestershire
- ⅓ cup lemon juice
- ¼ tsp sea salt
- Fresh ground pepper
- Few drops tobasco
- ½ tsp garlic powder
- ¼ tsp anchovy paste optional
Instructions
- Place all ingredients in a jar with a tight fitting lid and give a good shake.
