Kale Caesar Salad
A classic Caesar salad is a popular salad around here. I like to substitute romaine with kale, which works really well. It still covers all the bases with crispy greens, crunchy croutons and parmesan shards. I’ve added crumbled vegan bacon, boiled egg and roasted vine tomatoes. A tangy peppery dressing brings it all together.
Kale Caesar Salad
Ingredients
Caesar Dressing
- ¼ cup olive oil mayonnaise
- 3 tbsp freshly squeeze lemon juice
- 1 tsp white wine vinegar
- 1 tsp Dijon mustard
- 1 tsp worcestershire sauce
- 1 tbsp minced garlic
- 1 tbsp anchovy paste optional and highly recommended
- ½ tsp sea salt
- 1 tsp ground pepper
Instructions
- Place all the dressing ingredients in a jar and shake well until combined. If the dressing is too thick, add a tablespoon or two of lemon juice.
