Lemon Ricotta Fritters are surprisingly light and fluffy. They are the perfect fried Hanukkah or anytime treat. Yes I know they are not the traditional jelly doughnut, but they are a really delicious alternative. So golden and crispy on the outside and light with just a hint of lemon on the inside. They are not overly sweet, so a good dusting of confectioners sugar is required and then dipping them in jam or honey is a good thing.
The batter can be made in advance. The batter comes together really quickly, so just fry them up just before you’re ready to serve them.

How to Make Lemon Ricotta Fritters
You will need:
- Flour – all purpose flour will work in this recipe.
- Baking powder – lightens up the texture.
- Lemon zest – makes the flavour pop with freshness.
- Eggs – binds the mixture.
- Ricotta cheese – keeps them light, but adds a little richness.
- Sugar – I like using organic sugar. The fritters aren’t overly sweet, as there’s only 2 tablespoons in the batter.
- Vanilla – because vanilla adds something extra to baked goods.
- Oil – canola or any neutral oil.
Lemon Ricotta Fritters
Ingredients
- 2 large eggs, room temperature
- ½ cup ricotta cheese
- 2 tbsp organic sugar
- 1 tsp pure vanilla
- ½ cup all-purpose flour
- 1 tsp baking powder
- 2 tsp grated lemon zest
- pinch salt
- canola oil, for frying
- confectioners sugar
- honey or berry jam
Instructions
- In a large bowl mix eggs, cheese, sugar and vanilla extract with a fork.
- Add flour, baking powder, lemon zest and salt, stirring just until moistened.
- In a deep pot heat oil to 375°F.
- Drop batter by the tablespoonful, a few at a time, into the hot oil.
- Fry until golden brown, about 2-3 minutes. Drain on paper towel.
- Dust with confectioners sugar.
- Serve warm with honey or jam.
