Lemon Ricotta Fritters

Ingredients

  • 2 large eggs, room temperature
  • ½ cup ricotta cheese
  • 2 tbsp organic sugar
  • 1 tsp pure vanilla
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • 2 tsp grated lemon zest
  • pinch salt
  • canola oil, for frying
  • confectioners sugar
  • honey or berry jam

Instructions

  • In a large bowl mix eggs, cheese, sugar and vanilla extract with a fork.
  • Add flour, baking powder, lemon zest and salt, stirring just until moistened.
  • In a deep pot heat oil to 375°F.
  • Drop batter by the tablespoonful, a few at a time, into the hot oil.
  • Fry until golden brown, about 2-3 minutes. Drain on paper towel.
  • Dust with confectioners sugar.
  • Serve warm with honey or jam.
