Mango Passionfruit Yogurt Parfait
This layered tropical parfait happened because I had one very ripe mango that had to be used. It’s a quick breakfast, packed with delicious mango flavour layered with greek yogurt and topped with passion fruit and toasted coconut.
Breakfast couldn’t be easier. All you have to do is remove the mango peel and cut the juicy flesh from the pit. Puree the flesh until smooth and you are ready to layer the golden purée in a glass with yogurt.
This sweet summer breakfast, or dessert is healthy, colourful, and easy to make.
Mango Passionfruit Yogurt Parfait
Ingredients
- 1 mango, peeled
- ½ – 1 cup greek yogurt
- 1 passionfruit, flesh scooped out
- 1 tbsp toasted coconut
Instructions
- Remove the mango peel and cut the flesh from the pit.
- Purée the mango flesh in a food processor until smooth and set aside.
- Layer a few spoons of mango purée and a few spoons of yogurt in a glass. Repeat until the glass is full.
- Top with passionfruit and toasted coconut flakes.
- Chill or if you can’t wait, just dig in and enjoy this tropical parfait.
