Potato Latkes and Vegetable Latkes
Hanukkah (Chanukah) starts on Sunday and that means latkes … lots and lots of latkes. I like to make a variety of potato latkes, by adding sweet potato, zucchini, carrots and kale. They are usually served with sour cream and/or apple sauce, but the options for toppings are endless.
For my latke board I made three kinds of latkes. Traditional potato latkes are a must. Then there are sweet potato latkes and lastly carrot and zucchini latkes.
I’m keeping it simple and delicious with these toppings – homemade labneh, smoked salmon, cucumber, tomatoes, red onion and boiled eggs.
Everyone has their own traditions and favourite toppings when it comes to latkes on Hanukkah, so I’ve rounded it out with apple sauce for those who must have it.

Potato Latkes and Vegetable Latkes
Ingredients
- 4 russet potatoes
- 2 yukon gold potatoes
- 1 large onion, finely chopped
- 1 large carrot
- 1 large zucchini
- 3 large eggs
- ⅓ cup matzo meal
- 2 tsp kosher salt
- 1 tsp fresh ground pepper
- canola oil for frying
Instructions
- Peel and grate potatoes in food processor and soak in a large bowl of water.
- Once all the potatoes are grated, drain them very well and squeeze out all the liquid in a clean tea towel. Transfer to a large bowl.
- Add the chopped onion to the potatoes with eggs, matzo meal, salt and pepper and mix well.
For the Vegetable Latkes
- Remove two cups of the potato and onion mixture and place in another mixing bowl along with the grated carrot and zucchini.
- Heat oil and drop into the hot oil and fry until golden.
- I like them to be rustic looking, so I scoop up a heaping spoon full and fry them as they form.
- Serve with homemade apple sauce and/or sour cream and chives.
