Potato Latkes and Vegetable Latkes

Course Side Dish

Ingredients

  • 4 russet potatoes
  • 2 yukon gold potatoes
  • 1 large onion, finely chopped
  • 1 large carrot
  • 1 large zucchini
  • 3 large eggs
  • cup matzo meal
  • 2 tsp kosher salt
  • 1 tsp fresh ground pepper
  • canola oil for frying

Instructions

  • Peel and grate potatoes in food processor and soak in a large bowl of water.
  • Once all the potatoes are grated, drain them very well and squeeze out all the liquid in a clean tea towel. Transfer to a large bowl.
  • Add the chopped onion to the potatoes with eggs, matzo meal, salt and pepper and mix well.

For the Vegetable Latkes

  • Remove two cups of the potato and onion mixture and place in another mixing bowl along with the grated carrot and zucchini.
  • Heat oil and drop into the hot oil and fry until golden.
  • I like them to be rustic looking, so I scoop up a heaping spoon full and fry them as they form.
  • Serve with homemade apple sauce and/or sour cream and chives.
