Summer Roll Sauces
Fresh and light summer rolls are fun to make, crisp and refreshing to eat, made even better when dipped in the delicious ginger peanut sauce and tangy mango sauce. This summery meal has so many delicious flavours, colours and wholesome ingredients.
You can use any vegetables that you like. I used –
- english cucumber
- carrot
- red pepper
- green onion
- cabbage
- kale or spinach
- mint and basil leaves
- rice noodles
You can also find a different recipe for fresh salad rolls.
Summer Roll Sauces
Sweet. Spicy. Tangy. Creamy.
Ingredients
Ginger Peanut Sauce
- ½ cup creamy peanut butter
- ⅓ cup tamari or soy sauce
- ¼ cup rice vinegar
- 3 tbsp water
- 2 tbsp Thai red curry paste
- 3 tbsp lime juice
- 1 tbsp fresh grated ginger
Mango Chili Sauce
- ⅓ cup honey
- ¼ cup lime juice
- ¼ cup chili sauce
- 2 tbsp rice vinegar
- 1 small mango, diced
- ¼ cup fresh Thai basil, chopped
Instructions
For the Ginger Peanut Sauce
- Combine all ingredients in a bowl.
- Thin as desired with additional water.
For the Mango Chili Sauce
- Combine the honey, lime juice, chili sauce and vinegar in a bowl.
- Mix in the mango and basil.
