Lemon Walnut Bread

Ingredients

  • 2 cups almond flour
  • ¼ cup lemon juice
  • ½ tsp sea salt
  • ¼ cup raw honey
  • ½ cup butter, softened
  • 1 tbsp lemon zest
  • ½ tsp baking soda
  • 6 eggs
  • ¼ cup chopped walnuts

Instructions

  • Combine almond flour, lemon juice, salt and honey. Stir to mix together – it will be thick.
  • Cover the bowl and let it sit overnight in the fridge if you can. If you don’t have time to do this, you can proceed to the next step.
  • Preheat oven to 350°F.
  • Add butter, lemon zest and baking soda. Beat well.
  • Add eggs, and beat well.
  • Stir in the chopped walnuts.
  • Spray and line a 9×5 inch loaf pan with parchment paper.
  • Pour in the batter, smoothing the top.
  • Bake for 45-60 minutes, until a toothpick comes out clean.
  • Remove from oven and let cool.
  • Serve with honey butter or cream cheese.
