Thai Noodle Salad with Peanut Sauce
Another day, another cold noodle salad.
This Thai Noodle Salad with the Best Peanut Sauce is a mood booster, with its bight flavours and colours. It’s a fresh salad packed with veggies that lives up to its name. This is the best peanut sauce I have ever tasted and will be on repeat for sure. Make a double batch of the sauce, and save the rest for another use. I guarantee you will be happy you did.
Thai Noodle Salad with Peanut Sauce
Ingredients
- 6 ounces dry noodles, brown rice noodles, soba noodles or linguini
- 4 cups mixed cabbage, carrots and radish, thinly sliced
- ½ cup english cucumber, thinly sliced
- 1 red bell pepper, thinly sliced
- 3 green onions, sliced
- Handful parsley, basil and mint, (no cilantro in this kitchen)
- 1 tbsp jalapeño, finely chopped (optional)
- ¼ cup roasted peanuts, for garnish
- 2 tbsp sesame seeds
Thai Peanut Sauce
- 1 tbsp ginger, grated
- 1 tbsp garlic, finely chopped
- ¼ cup peanut butter
- ¼ cup orange juice
- 3 tbsp lime juice
- 2 tbsp low-sodium soy sauce or liquid aminos
- 3 tbsp honey or agave
- 3 tbsp toasted sesame oil
- ½ – 1 tbsp cayenne pepper or sriracha sauce
- ½ tsp salt
Instructions
- Cook pasta according to directions on package.
- Drain and chill under cold running water.
- In the meantime, blend the peanut sauce ingredients together in a blender until smooth.
- Place shredded veggies, bell pepper, cucumber, green onions, herbs and jalapeño in a bowl and mix.
- Add the cold noodles to the bowl and toss.
- Pour the peanut sauce over top and toss well to combine.
- Garnish with roasted peanuts, sesame seeds and herbs. Inspired by @feastingathome’s Thai Noodle Salad
