Valentine’s Shortbread Cookies

Shortbread cookies are the easiest cookies to make in my humble opinion. Once the dough is rolled out, it can be cut into any shape using a cookie cutter or a knife. The cookies hold their shape really well when they bake. They are crispy, tender and melt in your mouth with each bite.

Just a Few Simple Ingredients to Make This Recipe
- unsalted butter
- powdered sugar
- vanilla extract
- all-purpose flour
- cornstarch
Follow a Few Simple Steps to Make These Cookies
- beat softened butter with powdered sugar until well incorporated.
- mix flour and cornstarch and mix with butter to form a cohesive dough.
- shape dough into a disk
- place between 2 pieces of parchment paper and roll out.
- cut dough using a cookie cutter.
- transfer to a lined baking sheet and bake.
For Valentine’s Day, I cut the cookies with different sized heart shaped cookie cutters and glazed them with a two tone glaze. Then I went crazy with the sprinkles.
Valentine’s Shortbread Cookies
Ingredients
- 4 ounces (113 g) butter, softened
- ½ cup (56 g) powdered sugar, sifted
- 1 tsp vanilla extract
- 1 cup + 2 tbsp (140 g) all-purpose flour
- 3 tbsp cornstarch
Instructions
- Preheat oven to 325 °F and line a cookie sheet with parchment paper.
- Sift flour and cornstarch into a medium bowl and mix to incorporate.
- Mix butter and sugar until well combined.
- Add vanilla extract and mix to incorporate.
- Gradually sprinkle the flour mixture over the butter and sugar and mix until dough is formed.
- Place the dough between 2 pieces of parchment paper and roll it to 1/3″ – 1/2″ thick.
- Cut the dough with a cookie cutter and gently lift each cookie and place on the prepared pan.
- Bake for 10-12 minutes.
- Remove from the oven and let cool completely.
For the Glaze
- Mix 2 cups powdered sugar with 2 tbsp warm water, add more as needed for desired consistency.
- Place cookies on a rack, drizzle with the glaze and decorate with sprinkles.
