Preheat oven to 325 °F and line a cookie sheet with parchment paper.
Sift flour and cornstarch into a medium bowl and mix to incorporate.
Mix butter and sugar until well combined.
Add vanilla extract and mix to incorporate.
Gradually sprinkle the flour mixture over the butter and sugar and mix until dough is formed.
Place the dough between 2 pieces of parchment paper and roll it to 1/3" – 1/2" thick.
Cut the dough with a cookie cutter and gently lift each cookie and place on the prepared pan.
Bake for 10-12 minutes.
Remove from the oven and let cool completely.
