Add stemmed strawberries and honey to a medium saucepan and place on the stove over medium heat.
Stir the strawberries as they begin to soften.
Once the berries have softened to the point that they're starting to fall apart, add the chia seeds and stir them well. The chia seeds will help the jam achieve a gelatinous texture.
Let the mixture come to a slow boil, stirring continually.
Use a fork to break up the berries, if necessary.
Continue stirring the mixture over low heat for about 15-20 minutes, until a thick texture is reached, and then remove the pan from the stove.
Pour the jam into a clean jar and allow to cool, covered, at room temperature for an hour before placing in the fridge to cool completely.
