Preheat oven to 350°F. Spray a loaf pan with cooking spray and set aside.
In a medium bowl, combine flour, baking soda, cinnamon and salt.
In the bowl of a stand mixer, beat the bananas and sugar for a few minutes until well combined.
Add the cooled melted butter, eggs and vanilla and beat well scraping down the sides of the bowl. Add the dry ingredients and mix together until just combined. Stir in the chocolate chips.
Pour the batter into the prepared loaf pan. Optional step – slice a banana lengthwise and place two slices of the banana gently onto the batter. Bake in preheated oven for about 1 hour and 10 minutes, until golden brown and a skewer inserted in the center of the loaf comes out clean. Allow to cool for 20 minutes before removing from the pan.
