Chocolate Banana Bread

Ingredients

  • 1 cup all purpose flour
  • ½ cup unsweetened cocoa
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 3 bananas, (1 ½ cups) mashed
  • ¼ cup vegetable oil
  • ¾ cup brown sugar
  • 1 large egg
  • 1 tsp pure vanilla
  • 1 cup semi-sweet chocolate chips

Instructions

  • Pre-heat oven to 350°F.
  • Line a loaf pan with parchment paper and set aside.
  • In a small bowl, whisk together the flour, cocoa powder, baking soda and salt. Set aside.
  • In the bowl of an electric mixer, mix the vegetable oil, brown sugar and egg. Mix until smooth.
  • Add the mashed bananas and mix until combined.
  • Add the dry ingredients and stir until just combined.
  • Stir in the chocolate chips.
  • Pour batter into the prepared loaf pan. Bake 50-60 minutes until a toothpick inserted into the centre comes out mostly clean. Oven temperatures vary, so start checking at 50 minutes. Recipe from Diane Morrisey.
