Preheat oven to 375°F.
Place butter in a small pan and melt.
Stir together the cinnamon and sugar in a small bowl.
Unfold the puff pastry sheet on a lightly floured work surface. Depending on the size of the dough, you may need to cut it into a few rectangles and roll out to approximately 9 x 5”.
Roll the pastry out a bit and brush the surface with melted butter.
Sprinkle the sugar mixture over the butter.
Roll the pastry tightly along the long side.
Cut the pastry in half along the length of the dough.
Roll each piece into a spiral, tucking the edge under the roll.
Brush a muffin pan with some butter and place the spiral in the pan. Do the same with the other piece. Repeat the process again.
Brush the tops with a little butter.
Bake the spiral rolls for 22-25 minutes until golden brown.
Remove from the oven and run a knife around the edges to loosen. Allow to cool for a few minutes and gently remove each roll from the pan, brush with melted butter and sprinkle tops with the leftover cinnamon sugar mixture.
