Add avocadoes, tomatoes,onions, jalapeño, lime juice and parsley to a medium bowl.
Roughly mash everything together with a fork until evenly combined.
Season with sumac, salt and pepper.
Serve with tortilla chips.
If you’re not serving immediately, place an avocado pit in the centre of the dip (this helps to stop it from turning brown), cover and refrigerate until you’re ready to serve.
